What is Nuo Mi?

Nuo Mi, which is also called Sticky rice, which is the shelled seed kernel of grass rice (glutinous rice). According to the color of chaff and rice, it can be divided into red and white, and also divided into hairy and hairless. It is cultivated all over the country. The hometown of glutinous rice in China is located in Dazhou City, Sichuan Province.

Sticky rice

Sticky rice is milky white, opaque, or translucent, and sticky. It is divided into two types: indica glutinous rice and japonica glutinous rice. In southern China, it is called glutinous rice, while in northern China, it is often called Jiangmi. Glutinous rice is also the main raw material for brewing fermented glutinous rice (sweet rice wine) rice wine in the southern region. Glutinous rice contains protein, fat, sugar, calcium, phosphorus, iron, vitamin B1, vitamin B2, niacin and starch. According to traditional Chinese medicine, glutinous rice is warm in nature and sweet in taste, enters the lung and spleen meridian, has the functions of tonifying deficiency, nourishing blood, invigorating the spleen and warming the stomach, and is a mild tonic.

Types of Sticky rice

Indica Sticky rice

Also called long Sticky rice. Oblong, slightly flattened, 4-5mm long and 1.5-2mm wide. One end is blunt and round, and the other end is skewed, showing traces of embryo shedding. The surface is pale white, opaque and smooth. The texture is hard and the cross section is floury. After steaming, it has strong toughness and luster. Slight gas, sweet in the mouth. Growing in the south, because of the climate, two or three seasons can be harvested each year.

Japonica Sticky rice

Also called round Sticky rice. The grains are short and round, 3-4mm long and 1.5-2.5mm wide. I have the same long seed type. Microscopic identification of powder characteristics: starch grains are single grains and compound grains. Most of the single-grain starches are polyhedrons, the umbilical point and layer pattern are not obvious, and a few are round or hemispherical. Compound starch has many granules. Round glutinous rice grows in the north, where the climate is colder, so only single crop rice can be harvested.

How to choose Nuo Mi?

High-quality Nuo Mi grains are complete and full, and if you pick up a handful at random, they should be relatively uniform in size. However, poor-quality glutinous rice will have different lengths, and even a lot of broken rice.

High-quality glutinous rice is generally milky white or waxy white. The difference from rice is that it is opaque and has a shiny surface. If you find that the glutinous rice looks yellow, it means that the glutinous rice has become moldy. If you find that some rice grains in the glutinous rice are translucent, it may be mixed with rice.

Horizontal stripes

For many tonics, the longer the age, the higher the nutritional value, and the new Nuo Mi is better, the longer the time, the higher the nutrient loss, so if you find horizontal lines in the middle of the glutinous rice, it means that this glutinous rice is placed The time is too long, it is not recommended to buy.

Black spots

If the sticky rice is not stored properly, it is very easy to have insects, so when you choose it, you should also check whether there are small black spots in it. If there are any, it means that the glutinous rice has been infested with insects.
